You can view the completion list and your stats by pressing Guide for Yakuza Kiwami - Completion List Overview (1) and going to "Completion List" on the menu.

This is how 100% is going to look like.

The values I'll list are always going to be the maximum the game is going to require from you, so for example if you see here that I have listed "Talk to people 300 times", but in your game you only see "Talk to people 100 times", that means that once you complete the challenge from your game a new one will appear until you reach "Talk to people 300 times".

The following achievements will be unlocked by completing the Completion List:

Adventure

Talk to people 300 times: You'll probably have this by the time you finish the game. It simply requires you to talk to the people you can talk to.

Dine at eateries 100 times: Eat at restaurants for a total of 100 times. This counts for every time you close and open the menu for buying food at a restaurant, not for the single food/drink. There is a perk you can buy for CP points that allows you to eat even if your health bar is full.

Entertain yourself 100 times: You'll get this by playing minigames, like karaoke, bowling, clubs, photo booth etc.

Eat 30 food items: You'll have to buy food items from a store and eat them from your inventory. You can use Sushi Sets for example.

Eat 30 medicine items: You have to use medicine items. You'll probably get this early in the game.

Travel by taxi 30 times: Use the taxi a total of 30 times, it's pretty self-explanatory, taxi isn't that useful in this game as it is in the others (because we only have one location - Kamurocho) so at some point you'll have to go and spam Guide for Yakuza Kiwami - Completion List Overview (12) to travel until you complete the challenge.

Travel 100km on foot: You'll get this while completing the game to 100% most likely. It simply has to be the total distance you have travelled, whether by walking, running or dashing.

Travel 10km by dashing: This one is the total distance you travel by dashing (dashing = running with Guide for Yakuza Kiwami - Completion List Overview (13)).

Earn a total of 10 million yen: There are a few methods to earn money in this game, fewer than in Yakuza 0. You earn good money by beating all coliseum tournaments and then farming the last one by using Tiger Drop (learned from Komaki). At the beginning-mid game you can earn decent money by defeating Nouveau Riche enemies.

Spend a total of 5 million yen: You'll get this when going for the weapons completion.

Earn 1 million XP: I got this before ending the game. Farming Majima nets you TONS of XP.

Battle

Defeat 500 enemies on the street: You have defeat those annoying Thugs, Goons, Men in Black etc. You have to defeat 500 of them in total. You can make them spawn more or less often by using different items.

Defeat 200 enemies in every style (Brawler, Rush, Beast, Dragon): This is a total of four different challenges. You have to defeat 200 enemies in Brawler, 200 enemies in Rush, 200 enemies in Beast and 200 enemies in Dragon.

Help 30 attack victims around town: You have to help those poor citizens that often get attacked by thugs on the street (the ones that give you a reward after you beat the enemies).

Defeat 10 nouveau riche enemies: You'll have to unlock the CP reward first in order to make these guys spawn. They can easily be recognized by their glowing yellow suit. Fairly easy to beat and should net you around 100k yen every time. If you use the Celebrity Parfume item you can increase their spawn rate too, because they spawn randomly. You get a better example here if you don't know what you're looking for:

Defeat 1 Kiwami opponent: This is simple and completely random. At some point you might meet an enemy named "Kiwami". Just defeat him and you'll unlock this.

Use Heat Actions 300 times: This will unlock by the end of the story most likely.

Use 40 different Heat Actions: You will unlock this while going for 100% most likely.

Break 100 objects in battle: Use Beast style often and smash stuff around to unlock this.

Defeat 100 enemies using weapons: You will unlock this by the end of the story.

Acquire 100 different weapons: You need to acquire 100 different weapons in the game, this can be pretty annoying (it requires grinding) and should be left to deal with after you finish with everything else, especially Coliseum because you'll need a lot of money to complete this challenge. Acquire 70 different gear items: You need to acquire 70 different gears and accessories in the game, this can be pretty annoying but easier than the weapons. Check the "Weapons, Gear and Accessories" page of the walkthrough for more detailed info.
